Strawberries ‘N Cream Bircher Muesli
This quick and easy Strawberries ‘N Cream Bircher is a creamy, refreshing breakfast perfect for busy mornings, post-ride recovery, or pre-ride fuel.
Made with hearty rolled oats, nuts, and chia seeds, it’s soaked in a naturally sweet and tangy strawberry cream milk blended from fresh berries, plant-based milk, coconut cream, and a hint of citrus.
Meal prep it in advance for a grab-and-go breakfast or a satisfying post-ride snack that keeps you fueled and feeling good.
Serves 4-6
5 minutes prep, 20-25 minutes to overnight for soaking
Ingredients
Bircher
2 cups rolled oats
2 Tbsp quinoa flakes (optional)
½ cup chopped pecans and/or almonds
½ cup unsweetened shredded coconut
2 Tbsp chia seeds
½ tsp ground cinnamon
1 cup chopped fresh strawberries
Strawberry Cream Milk
1 cup fresh strawberry halves
1½ cups unsweetened almond, oat, or soy milk
¼ cup fresh-squeezed orange juice (sub 2 Tbsp lemon juice + 2 Tbsp milk)
½ cup canned coconut milk cream or Greek yogurt
2 Tbsp maple syrup or honey
1 tsp vanilla extract
Pinch of salt

Directions
Add the Bircher ingredients to a medium-sized mixing bowl. Set aside.
To make the Strawberry Cream Milk, blend all the ingredients in a high-speed blender until smooth. Pour over the dry Bircher mixture. Stir until everything is well combined. Let it sit for 20-25 minutes at room temperature, or refrigerate it overnight.
Serve at room temperature, adding additional milk as needed to reach the desired consistency. Top as desired. Leftovers can be stored in the fridge for up to 5 days.
