Ingredients
Oatmeal
1 Tbsp unsalted butter (or ghee/coconut oil)
6 Medjool dates, pitted and chopped
½ cup water
1¼ cups milk (dairy or plant-based)
¾ cup rolled oats
¼ tsp vanilla extract
¼ tsp ground cinnamon
⅛ tsp ground cardamom
Pinch of sea salt
Toffee Drizzle
1-2 Tbsp reserved date paste (from oatmeal)
1-2 tsp butter (or coconut oil)
1 tsp nut butter (almond, peanut, or cashew)
1-3 Tbsp milk (as needed for texture)
Pinch of salt
Splash of vanilla
Toppings
2 Tbsp chopped walnuts, toasted
1 Tbsp hemp seeds
Flaky sea salt, for finishing

Directions
1. Brown the butter & caramelize the dates:In a small saucepan over medium heat, melt the butter until lightly browned and fragrant, about 2 minutes. Add the dates and water and cook 1–2 minutes until softened, then mash into a thick, glossy paste.
2. Make the toffee drizzle: While the date mixture is hot, immediately scoop out 1-2 Tbsp of the date paste into a small bowl. Stir in the butter so it melts, then add the nut butter, milk, salt, and vanilla, mashing until smooth and pourable. Set aside.
3. Cook the oatmeal: Add milk, oats, vanilla, cinnamon, cardamom, and a pinch of salt to the remaining date mixture in the pot. Bring to a simmer and cook, stirring often, until creamy and tender, 4-6 minutes.
4. Serve: Divide oatmeal between bowls, drizzle with the toffee sauce, and top with walnuts, hemp seeds, and a pinch of flaky sea salt.
Baker’s Tip
For a heartier serving, increase the oats to 1 cup, add an extra ¼-½ cup milk to maintain a creamy texture, and consider mixing in 1 additional date to keep the sweetness balanced.
