1. Coffee Banana Bircher

Kickstart your day with a breakfast that tastes like your favorite café order. This creamy bircher blend brings together soaked oats, banana, and a hit of coffee for an energizing start.

Ingredients

1 ripe banana

1–1½ cups milk of choice

2 pitted Medjool dates

1 shot espresso (or 1 tsp instant coffee)

1 Tbsp nut butter

1 tsp hemp, chia, or flaxseed

¼ cup Greek or coconut yogurt

1 square dark chocolate or 1 Tbsp chips

½ tsp cinnamon

¼ tsp cardamom

1 cup rolled oats

Directions
Blend everything except oats. Stir in oats. Soak 20 minutes (or overnight). Top with Morning Shift Granola, banana slices, nuts, and a drizzle of syrup.

2. Coconut Chia Pudding

Meal prep never looked (or tasted) this good. Coconut milk and chia seeds create a silky base that thickens overnight. Makes a great snack between meals or post-ride.

Ingredients

1½ cups unsweetened almond milk

1 cup full-fat canned coconut milk

½ cup raw cashews

3 pitted Medjool dates (or 2 Tbsp maple syrup)

2 tsp vanilla extract

Pinch sea salt

½ cup chia seeds

Directions
Blend everything except the chia. Stir in the chia seeds; let rest for 10–20 minutes. Stir again and refrigerate 4+ hours or overnight.

How to pair with Morning Shift
When you’re ready to serve, add a small handful of Morning Shift Granola on top for crunch, or layer it parfait-style: chia pudding → granola → fruit → more granola—the toasted coconut notes in the granola pair perfectly with the tropical vibes.

3. Chocolate Cheesecake Pudding

A breakfast or snack that tastes like dessert but still fuels you? Yes, please. This rich chocolate pudding from the Bakin’ Biker ’26 Cookbook packs protein and satisfies a sweet tooth without slowing you down.

Ingredients

1½ cups Greek yogurt

1½ cups cottage cheese

1 tsp vanilla extract

¼ cup maple syrup

2–3 Tbsp cocoa powder

Directions
Blend ingredients until smooth. Spoon into bowls or jars. Top with fruit and Morning Shift Granola.

4. The Cozy Warm Granola Bowl

On chilly mornings, nothing beats a warm, comforting granola bowl for your pre- or post-ride breakfast.

Ingredients

½-1 cup Morning Shift Granola

½-¾ cup warm milk (cow’s, soy, or almond)

1–2 Tbsp nut butter

Fresh fruit of choice

Maple syrup, to drizzle

Directions
Warm milk until hot but not boiling. Pour over granola and let it soften for 1 minute. Top with nut butter, fruit, and maple syrup. For extra crunch, sprinkle more granola on top. It’s fast, satisfying, and legit tastes like a hug.

5. Maple Tahini Banana Pops

4–5 ripe but firm bananas

1 cup Greek yogurt (or dairy-free alternative)

¼ cup runny tahini

2 Tbsp maple syrup or honey

½ tsp vanilla extract

½ cup chocolate chips

1 tsp coconut oil

Morning Shift Granola

Flaky sea salt

Directions
Slice bananas lengthwise; insert sticks if using. Spread yogurt-tahini mixture on bananas. Melt chocolate + coconut oil in 20-second increments in the microwave; drizzle over banana slices with a fork. Sprinkle Morning Shift Granola and flaky salt on top. Freeze 2-3 hours. Let thaw 5-10 minutes before eating. A great pre-or post-ride snack on hot Summer days.

6. Chocolate Date Spread on Toast

Ingredients

15 Medjool dates, soaked in warm water and drained

3 Tbsp cacao powder

½ tsp fine sea salt

½ tsp cinnamon

¼ tsp ginger

1 tsp vanilla extract

¼–⅓ cup hot brewed coffee or warm milk

Directions
Blend soaked dates with remaining ingredients until smooth. Add a splash of soaking water if needed. Chill 30 minutes to firm. Spread on toast and top with Morning Shift Granola.
