Mini Cinny Roll Bites

It’s been a week since I undertook the Breck Epic 6 Day Mountain Bike Stage Race. Since then, I’ve been in recovery mode by enjoying easy rides around Summit County, coaching the Team Summit kids and eating comforting foods.

These Mini Cinny Roll Bites sure hit the spot when it comes to comfort, recovery foods while the air is starting to get a little cooler in Breckenridge.

This recipe uses alternative ingredients to the typical cinnamon rolls that use boatloads of sugar, butter and cream cheese. Plus, you can have them done in 10 minutes or less by simply popping them in the microwave.

Enjoy these sweet, cinny and mini bites during a recovery day, for an early morning breakfast treat or as a weekend (or weeknight) midnight snack.

Ingredients

Cinnamon Roll

  • 3/4 cup almond flour

  • 1/4 cup yogurt

  • 1 Tbsp maple syrup

  • 1/2 tsp baking powder

  • 1/4 tsp sea salt

Cinnamon Sugar Filling

  • 1-2 tsp coconut oil, melted

  • 1 tsp cinnamon

  • 2-3 tsp coconut sugar

Icing

  • 2 Tbsp yogurt or coconut milk

  • 2 tsp maple syrup

Optional Toppings

  • Walnuts

  • Pecans

  • Banana slices

Directions

Mix together cinnamon roll ingredients in a small dish. Shape dough into a ball. Lightly grease a hard surface with coconut oil, butter, or cooking spray and place your dough ball onto the greased counter.

Roll out the dough with a rolling pin or your hands until you have a small rectangular shape. Lightly spread the melted coconut oil over the dough and sprinkle with cinnamon and coconut sugar.

Using your fingers, gently roll up the dough (rolling the long side of the dough). Slice your rolled dough into 6 small rounds and place them in a microwave-safe dish. Microwave cinnamon roll bites for 2 minutes.

Whisk together your icing in a small dish. Remove cinnamon roll bites from the microwave and drizzle them with icing. Top with pecans, walnuts and/or banana slices if desired. Enjoy immediately!
