Biked Goods Mini Muesli Bites

With the Breck Epic coming up, I wanted to make an EPIC cycling snack to help fuel me throughout the 6-day stage race. I also wanted to bake a snack that would be a Biked Goods Staple for years to come.

So I started to think back to what got me started with this cycling and food venture in the first place….Muesli!

I credit muesli as the ONE food item for shaping my healthy living, adventurous, and cycling-centric lifestyle.

SO why muesli?

Well, the goal for us as endurance athletes is to fuel our bodies to keep us satisfied and energized, right? Right! All the nutritious ingredients included in muesli, -  fiber, protein, fats and quality carbs - help with just that. In my mind, this makes muesli one of the most complete foods we can eat as endurance athletes.

This led me to create the ultimate muesli cycling snack that packs a punch but also gets you through long days in the saddle and events like Breck Epic.

So here I introduce to you Biked Goods Mini Muesli Bites.

These are portable, bite-sized, and filled with simple and complex carbohydrates for refueling. They’re made with 5 simple ingredients and your choice of optional add-ins to customize your mini muesli bite into theee most EPIC bike ride snack.

The base recipe is great for eating immediately before or during a cycling workout or event of 60 minutes or more. Add in some nuts, nut butter or other dried fruits for fueling longer, lower intensity endurance rides.

Making these Biked Goods Mini Muesli Bites and sharing them with you is part of my ultimate goal to bring people together through good food and cycling. They bring all the things I love together in one small bite, and hopefully, will transform the way you fuel your rides and lifestyle going forward.

Let’s ride on to the recipe!

Ingredients

*Yields 24 Mini Muesli Bites.

Base Batter

  • 2-1/2 cup organic rolled oats

  • 1/3 cup coconut sugar (Give Madhava Organic Coconut Sugar a try!)

  • 1/3 cup natural sweetener (Brown rice syrup, maple syrup or honey all make good choices)

  • 1/3 cup coconut oil, melted

  • 2/3 tsp vanilla extract

  • Love, lots and lots of love

Optional Add-Ins

  • 1 tsp salt

  • 1/3 cup dried fruit

  • 1/3 cup unsweetened shredded coconut

  • 1/3 cup finely chopped nuts

  • Nut butter or jam to make them stuffed mini bites! (See how below)

Directions

Preheat the oven to 360 degrees. Lightly grease a 24 count mini-muffin pan. Pour 1 cup of rolled oats into a food processor. Process for about 1 minute until oats are pulverized into oat flour. Add in the remaining rolled oats, coconut sugar, and optional add-ins. Pulse until base and add-ins are in small bits. Pour in sweetener, coconut oil, and vanilla extract. Pulse just until combined. The result should be a sticky, gooey batter, similar to cookie dough.

Fill each muffin tin about 3/4 way full, making sure not to overfill! Bake in the oven for 10 to 12 minutes or until golden brown. Remove pan from oven and let cool in pan on a wire cooling rack in the pan. Once completely cooled, remove from the pan and store in an airtight container for 4 to 5 days or in the freezer for longer.

Tip: To make your Mini Muesli bites stuffed, fill a cupcake injector or squeeze bottle with your favorite nut butter or jam. Once the minis are out of the oven and cooled, poke a tiny hole in the bottom/top of the bite to make room for the filling. Carefully squeeze in your filling and wa-la! You now have a Mini Stuff’d Muesli Bite!
