Take 5 Date Bar Broken in Half

I’ve been munchin' on these Take 5 Date Bars for an indoor cycling pre-ride or post-ride snack. They also make a great midday snack or dessert! They have a chewy, caramel-y, and crunchy texture with just the right amount of sweetness and saltiness to satisfy your “candy” bar cravings.

Ingredients

  • 12 Medjool Dates

  • A smear of peanut butter for each date (or other nut butter)

  • 3-4 roasted peanuts per date

  • 1 pretzel per date

  • 6 ounces dark chocolate, finely chopped

  • Flaky sea salt

Directions

Cut a slit along the top of each date. Discard the pits. Using your hand or the bottom of a glass, smash the dates into a flat circle. Smear each date with peanut butter and place pretzel and peanuts on top, softly pressing down into the date.

Transfer dates to a parchment paper-lined plate or sheet pan. Freeze for 30 minutes.

Microwave chocolate on HIGH in 20-second increments. Repeat until it’s beginning to melt, about 1 minute. Stir until smooth and let cool slightly.

Take dates out of the freezer. Spoon the chocolate onto each turtle and sprinkle with flaky sea salt. Return to the freezer and chill until firm, about 30 minutes. Enjoy!
