It was an early Wednesday morning as I started my bike ride. As the sun rose, yellow aspen trees glistened with snow-covered mountains peaks shining in the background.

I was craving something sweet, crunchy and nutritious for an early morning bike snack. Out I pulled a Sunrise Date Cereal Bar. I took a bite and got hints of crunchy vanilla cereal, caramely dates, savory tahini, and sweet honey that made my mouth happy.

These cereal bars are made with 6 simple ingredients and can be whipped up in 10 minutes. They wrap easily for an on-the-go bike breakfast snack that will help you catch plenty of early morning mountain sunrises.

Optional add-ins

  • Chocolate chips

  • Dried tart cherries 

  • Choice of nuts/seeds

Directions

Pour cereal and shredded coconut into a mixing bowl. Add dates, tahini, honey and salt to a high-speed blender and blend until combined. Pour mixture over cereal and stir until cereal is evenly coated. Fold in your optional add-ins. Press cereal bar mixture firmly into a lightly greased bar baking pan or baking dish and. Cover and refrigerate or freeze for at least 30 minutes or until firm.

Scoop out of bar pan or slice, individually wrap with Skratch Paper 2.0 and grab when ready for your next ride. They do not need to be kept in the fridge but will last the longest that way!
