Baked Peaches And Oats Breakfast Crispy in a dish with an oven mit

September is #BetterBreakfastMonth! Start your day with this easy, whole-fruit breakfast crisp of baked peaches, oats, dried fruit, nuts, and spices. Top it off with yogurt and you have the ultimate morning meal.

Ingredients

  • 1 peach sliced

  • Lemon juice

  • 1/3 cup rolled oats

  • 1 Tbsp chopped walnuts

  • 1 Tbsp maple syrup

  • 1-2 Tbsp apple juice

  • 1/2 tsp cinnamon

  • 1/2 tsp ground ginger

  • 1 Tbsp dried tart cherries or currants

  • A sprinkle of coconut sugar

  • Sea salt

Directions

Preheat oven to 350 degrees. Slice your peach in half and brush the cut side with lemon juice. Add peach halves to a small baking dish or bowl. Add oats, walnuts, dried fruit, cinnamon, ginger, salt and coconut sugar to a small bowl. Add in maple syrup and apple juice, and stir/toss until oat topping is well combined. Top peaches with the oat topping and bake for 30-40 minutes or until peaches are tender and the oat topping is browned. If desired, top warm peach halves with yogurt, vanilla honey, and/or additional maple syrup.
